This vanilla layer cake uses a simple buttercream and fruit finish. The method keeps the base recipe short, while the checklist treats flavor, baking powder, colors, sprinkles and fondant as separate evidence questions.

Vanilla cake

  • 280 gplain/all-purpose wheat flour
  • 12 gbaking powder with disclosed sub-ingredients or suitable certification
  • 3 gfine salt
  • 200 gunsalted butter, softened
  • 240 gcaster or granulated sugar
  • 4 largeeggs, at room temperature
  • 180 mlplain milk
  • 10 mlalcohol-free vanilla extract, vanilla powder, or vanilla-bean seeds

Buttercream and simple finish

  • 250 gunsalted butter, softened
  • 450 gicing/confectioners’ sugar
  • 30–45 mlplain whipping cream or milk
  • 5 mlalcohol-free vanilla, optional
  • 200 gfresh berries or sliced fruit, dried thoroughly
  • Optionaldecorations whose complete ingredient list has been checked

Method

  1. Prepare. Heat the oven to 180°C/350°F conventional (160°C fan). Grease and base-line two 20 cm/8-inch round tins.
  2. Mix the dry ingredients. Whisk flour, disclosed baking powder and salt so the leavener is evenly distributed.
  3. Cream butter and sugar. Beat for 3–4 minutes until lighter in color. Add eggs one at a time, mixing after each addition.
  4. Finish the batter. Mix in the vanilla. Fold in the dry ingredients in three additions, alternating with milk. Stop when no dry flour remains.
  5. Bake. Divide between tins and bake for 28–32 minutes. Cool 10 minutes in the tins, then cool fully on a rack.
  6. Make buttercream. Beat the butter smooth. Add icing sugar gradually, then enough cream for a spreadable texture. Add optional alcohol-free vanilla.
  7. Assemble. Sandwich the cooled layers with buttercream. Cover the top and sides, then add fruit. Add packaged decorations only after checking their exact formulation.

The birthday-cake ingredient checklist

1. Vanilla and other flavors

Use alcohol-free vanilla, vanilla powder or vanilla bean if you want to avoid a disputed flavor-carrier question. “Birthday cake flavor” is not a source description; request its carrier and composition or choose a certified product.

2. Food colors

Ask for the exact color name or number. Carmine/cochineal/E120 is insect-derived and is excluded by this site’s conservative screening profile. Other named synthetic or plant colors still need the rest of the formulation checked, including carriers and glazing agents.

3. Sprinkles and sugar pearls

Sprinkles are compound confectionery products. Check colors, confectioner’s glaze or shellac/E904, gelatin, glycerin, emulsifiers and flavor. Pearlescent finishes can contain multiple coating ingredients not obvious from the front label.

4. Fondant and modeling paste

Commercial fondant may contain glycerin, gelatin, shortening, mono- and diglycerides, colors and flavors. A vegan claim can remove animal-derived ingredients but does not answer every alcohol-carrier or certification question.

5. Ready-made toppers

Paper, acrylic or untreated wooden toppers are not eaten, but food-contact suitability still matters. Edible printed toppers add inks, humectants and carriers; obtain the edible sheet and ink composition from the supplier.

A low-complexity finish

Fresh berries, toasted nuts, plain verified chocolate curls and simple piped buttercream usually create a festive cake with fewer source-dependent components than a heavily coated sprinkle or fondant design.

Make-ahead and storage

Bake the layers one day ahead and keep them well wrapped after cooling. Buttercream can be prepared the same day as assembly. Refrigerate a cake containing fresh cream, cream cheese, custard or other perishable filling. Fruit should be clean and dry before it touches frosting.
