This page answers both parts of the search: how to bake the cookies and how to inspect chocolate-chip ingredients. It does not maintain a brand or SKU list because formulations and certifications change.
The dough uses browned or simply melted butter, brown sugar and a short ingredient list. The product decision sits mostly in the chocolate chips: the front of the bag is not enough, so read the cocoa, sugar, milk, emulsifier and flavor sub-ingredients.

This example names soy lecithin. Generic “lecithin” would require source verification.
Ingredients
- 170 gunsalted butter
- 160 glight or dark brown sugar
- 80 gcaster or granulated sugar
- 1 largeegg
- 1 largeegg yolk
- 5 mlalcohol-free vanilla extract or suitable vanilla powder
- 240 gplain/all-purpose wheat flour
- 4 gbaking soda (about ¾ teaspoon)
- 4 gfine salt (about ¾ teaspoon)
- 200 gchocolate chips with a checked full ingredient list
Method
- Prepare the butter. Melt the butter and cool it until warm, not hot. For a nuttier flavor, cook it gently until the milk solids turn golden, then cool.
- Mix sugars and wet ingredients. Whisk both sugars into the butter. Add the egg, yolk and alcohol-free vanilla and whisk until smooth.
- Make the dough. Stir flour, baking soda and salt together, then fold them into the wet mixture. Fold in the checked chocolate chips.
- Chill. Cover and refrigerate for 45 minutes. Heat the oven to 175°C/350°F conventional (155°C fan) and line two trays.
- Portion. Scoop about 45 g of dough per cookie and space the portions well apart.
- Bake. Bake for 11–13 minutes, until the edges are set and the centres still look slightly soft. Cool on the tray for 8 minutes before moving to a rack.
How to check chocolate chips
Read past “chocolate chips”
A complete label might read: “sugar, cocoa mass, cocoa butter, milk fat, emulsifier (soy lecithin), natural vanilla flavor.” Each sub-ingredient should be screened. When a compound ingredient has no sub-list, request the specification from the brand.
Lecithin/E322
“Soy lecithin” or “sunflower lecithin” names the source. Generic “lecithin” or “E322” does not. MUIS gives lecithin as an example of a source-dependent ingredient: plant-derived can be acceptable, while an unsuitable animal source is not.
Mono- and diglycerides/E471
These emulsifiers can be made from plant or animal fat. Wording that names a plant source is more informative; otherwise ask the manufacturer or look for current product certification.
Flavor and milk components
Generic flavor needs carrier and source evidence when those details matter to your selected profile. Plain milk fat or milk powder is a clear dairy term, but whey, enzymes and more complex dairy inclusions may need their own source review.
Filled, coated and candy-style chips
Caramel, marshmallow, candy shell, glossy coating or flavored centre can introduce gelatin, glycerin, shellac/E904, carmine/E120 and additional emulsifiers. Do not transfer the result from plain dark chips to a different chip type from the same brand.
Brands can reformulate, change suppliers, move factories or change certification scope. Verify the package and current certificate that apply in your country and on the date of purchase.
Texture adjustments
- Thicker cookies: chill longer and bake the dough from cold.
- Smaller cookies: portion 30 g each and begin checking at 9 minutes.
- Less sweet: reduce the chips rather than heavily reducing dough sugar, which also affects spread and texture.
- No vanilla: omit it or add finely grated orange zest; the cookies will still bake normally.
